Fintachy oysters are a type of curved oyster (L'huître creuse), produced between the estuaries of the Loire River and Gironde in western France. Originally, it was a source of sea salt. After the salt pans were abandoned, local fishermen used them to cultivate oysters. This abandoned salt pan is called Claire, which has special algae and plankton.

Therefore, Fintachy oysters are slightly light green, with a faint hazelnut aroma, and a sweet and crisp taste.
