Belon oysters, which originate from the Belon River in France, are known as the "king of oysters". They produce flat oysters (L'huître plate) that look like scallops.

This oyster is produced at the mouth of the Belon River in Brittany, where the waters are clear and rich in plankton. The oysters produced here have distinct characteristics, with a sweet seaweed and iodine flavor, and a drupe-like aroma. They have a crisp and chewy texture, strong minerals, and are even slightly irritating. Not everyone can accept it, but many gourmets flock to it. It usually takes four years for a Belon oyster to grow and then two months of fattening in seawater to develop its unique flavor.
